In this photo are some crostini with goat cheese, fresh basil and sun dried tomatoes. I am not a big fan of goat cheese- I have trouble getting past the sour barnyard taste. Anyone have a favorite recipe featuring goat cheese that will win me over? I'd love to learn to love it!
I think we might be preparing lots more vegetarian food in our home post experiment, and I'm going to invest in a copy of Vegetarian Cooking for Everyone. Have you tried anyting out of the ordinary in your kitchen this summer? Do tell!

We're actually eating our way through the pantry and deep freeze. We've budgetted a bit, and the area of spending that took the hardest hit was on groceries- as vegetarians we sort of see something that looks interesting and buy it on a whim, but then never make it. It just sits and waits while we go back to old-and-easy-to-make favorites. So now we are trying everything we've ever stocked up on.
I gave up sugar and flour in January. I have really enjoyed all the fresh veggies this summer. I also feel so much better.
Every night for the past week I've been eating Raw Chocolate Ice Cream. You combine 2 frozen bananas, cocoa powder, and a sweetener (maply syrup, honey, etc.) in a blender and blend until smooth and creamy. Then you can top with walnuts or strawberries…the possibilities are endless. You can also add vanilla or almond flavoring. I recently discovered this and it tastes and looks just like soft serve ice cream. I don’t think I’ll buy real ice cream ever again.
That looks so good! I am cooking with more fresh veggies this summer...and my snacks have been fresh fruit! You live in a wonderful place to enjoy both! ♥
