Rare is the cookie that doesn't have butter as it's first ingredient. Biscotti is that elusive breed. I just made
this ginger and almond version, and I'm feeling inspired to try a thousand variations. (Including dipping it in chocolate, thereby eliminating the virtues of a butter free cookie...ah well.) I've been enjoying mine with a teeny cup of joe around 4pm. Heaven.
