Toasted coconut cupcakes: just added a splash of coconut extract
to this recipe for the cupcakes. A bit more coconut extract to
this recipe for the frosting. Then toasted flake coconut in a heavy frying pan until golden brown and rolled the frosted cupcakes in the coconut to coat. We did a few mini and a few regular sized ones and I loved the juxtaposition of large and small. They didn't last long though!
