Tarts and Champagne! (Pink, just for fun.)



Whipped up this wonderful lemon tart this weekend. With the leftover crust (why is there ALWAYS leftover crust, and why am I so incapable of tossing it?) I made some impromptu mini tarts with apricots, apricot preserves and a dash of pistachios to give a pretty contrast. Mmm! That was a very lovely evening indeed.

Hahahaha I NEVER through any leftover pastry either! My freezer will have little "logs" of cookie dough, tart pastry, sauces and custards at any given moment!
These mini tarts must have been very cute :)
