How's that Diet going?
Yup. This recipe is for those of us who made that most clichéd of all New Year's Resolutions. I should add that I despise cottage cheese- (sorry, but the texture is like cold barf) and I was skeptical when hubby showed me the recipe. I am now won over.
New Year's Resolution Flapjacks
1/2 cup low fat cottage cheese
1/2 cup old fashioned oatmeal (uncooked)
4 egg whites
Splenda, Vanilla and Cinnamon to taste
Blend well in food processor (so the oats get chopped up, and the whites get frothed) and proceed to cook and flip like old fashioned flap jacks.
We topped ours with blackberries and sugar free syrup. Bliss! Healthy food that doesn't taste "lite"!

Oh boy, that looks yummy! I have a grain mill... I wonder what would happen if I ground the oats into flour, and then mixed with the egg whites? I imagine your way makes it nice and hefty, though, with all those rough-cut oats...yummy... :)
I hate cottage cheese too... but those look YUMMY...

When I was in my super strict diet and excercise days, I would eat these pancakes every day. They are yummy.
