Blueberry Muffins with Coconut and Walnuts
I've made an unofficial vow to not buy any ready made sweets. The benefits of this are twofold- if I want something sweet, I have to be prepared to wait an hour or two for it to come out of the oven. This removes the element of instant gratification that allows me to gobble down two sleeves of Oreos before I know what's happened. (And it never feels good when that particular reality sinks in, does it?)
The other, far more important, benefit is how absolutely delicious things are when you make them yourself. Whenever I taste store bought baked goods now, I can taste the preservatives and chemicals above all else. They just don't taste nearly as good. And that is reason enough for me to make them myself.
I jazzed up this blueberry muffin recipe by adding some chopped walnuts, coconut and a light dusting of washed brown sugar to the tops before baking. They were scrumptious. What's cooking in your kitchen of late?

They look yummy! I also prefer to bake than buying from the store.
I love eating organic chocolate chip cookies right out of the oven with a glass of milk. Mmm!
Oh my golly, those photos make me drool! And your muffins have such pretty round tops--mine always look kinda flat. YUM!
